Quick Apple Cake
This extremely simple and quickly prepared dessert contains no eggs or milk, yet it still holds together well. If you bake it on Sunday evening, youll be glad to have it for breakfast on Monday morning, making it easier to start the new work week.

Preheat the oven to 200 °C. Wash the apples, cut them into quarters, and remove the cores. Slice the cleaned apple quarters thinly. Wash the lemon, cut it in half, and squeeze the juice from both halves. Mix the apples with lemon juice, flour, and a pinch of salt. Transfer the apple mixture into a greased medium-sized baking dish, press it down lightly, and smooth the top.

Prepare the topping. In a bowl, mix the flour, cane sugar, and cinnamon. Add the oil and mix with a fork until crumbs form. Sprinkle the topping evenly over the apples. Bake in the preheated oven on the middle rack for 30 minutes.

Let the baked cake cool first, then cut it into smaller pieces and carefully transfer them to a serving plate using a wide spatula.

Advice
Instead of spelt flour, you can use another type of flour, but spelt flour gives a special flavor. You can also use white sugar instead of cane sugar, but the taste will be different, less rich. For cakes, we use sour apples. For this cake, the Bobovec variety, an old Slovenian winter apple, is excellent. The apple cake is very crumbly, so some skill is needed when transferring it.
