Quick Apple Pastry

100 g Sugar, white

Steps

In a small saucepan, melt the butter slowly over low heat. Remove from heat and let it cool to lukewarm. Preheat the oven to 180 degrees Celsius. Line a small square baking pan (20 cm side) with parchment paper (grease with butter and dust with flour).

Peel, core, and cut the apples into 0.5 cm pieces. Place them in a bowl, pour over lemon juice, mix well, and set aside.

In a bowl, using an electric mixer, beat the eggs, vanilla extract, and both types of sugar until frothy. Continue mixing and slowly add the melted butter.

Sift the flour into the bowl and mix it with the spices. Remove two tablespoons of the mixture and add it to the bowl with the apples. Gently mix so that the flour and spices coat all the pieces. Add baking powder to the dry mixture, then sift it onto the egg mixture. Using the electric mixer on low speed, mix well until you get a smooth batter. Fold in the apple pieces with a spatula or spoon.

Pour the batter into the baking pan and spread it evenly. Smooth the top. Bake the pastry in the preheated oven for 24 to 27 minutes. When the edges are nicely browned and the center turns golden brown, remove it from the oven. Once cooled, cut it as desired and serve with a cup of warm or cold drink.
