Quick Apricot Muffins
This pastry could also be called sunny muffins. It is suitable for celebrations and parties, and it also works great as a treat for a picnic or garden party. Of course, you can also prepare it just to surprise little sweet-tooths with a good homemade pastry.

125 g Butter, unsalted

100 g Powdered sugar

1 bag Sugar, white

3 pieces Egg, fresh

150 g Flour, Wheat, bread flour

0.25 teaspoons Baking powder

30 g chocolate, dark

Steps

Preheat the oven to 180 degrees Celsius. Grease the muffin tin with butter and dust with flour (remove any excess flour).

Sift the flour and baking powder into a bowl. Mix the sifted ingredients well. Finely grate the chocolate. Drain the apricot halves well.

Cream the softened butter with sugar until smooth. Gradually add the eggs one by one, mixing well each time and scraping the sides of the bowl with a spatula.

Add the dry ingredient mixture to the egg-butter mixture. Mix on low speed until you get a uniform batter, then quickly fold in the grated chocolate.

Fill the muffin tin cavities 2/3 full with the prepared batter. Add the apricot halves, placing them rounded side up. Gently press the apricots into the batter with your fingers. Place the tin in the preheated oven for about 20 minutes.

Let the baked muffins cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. When serving, you can place each muffin in a paper basket.
