Quick Bean Soup with Mint

Ingredients

70 g Meat, pork, smoked bacon

1 piece Potatoes, white

250 g Beans, fresh

500 ml Soup base, chicken, cube

2 twigs Mint

Cut the pancetta into small pieces. Peel, clean, wash, and dice the potatoes. Wash the mint sprigs, shake them dry, save both tips, and finely chop the remaining leaves.

Place a larger pot on the stove and fry the bacon over moderate heat until it turns nicely brown. Then add the diced potatoes and chicken broth. Increase the heat until the liquid starts to boil and simmer gently for about 10 minutes until the potatoes soften. Then add the beans and cook for another 4 minutes.

Remove the pot from the heat and add the chopped mint. Mix everything well. Blend the soup with an immersion blender until smooth. Serve the soup in a glass or bowl and garnish with the saved mint tips.

Advice
Instead of frozen beans, you can also use fresh ones, but in this case, the soup will need to cook longer. You can also serve the bean soup at a party in smaller glasses.
