Quick Bread with Zucchini and Feta
The first time you bake this bread, youll find that baking bread is one of the simplest things. The trick is that you dont need to knead or let the dough rise, as we use baking soda and baking powder instead of yeast. Simply mix all the ingredients together, pour into a baking dish, and bake. Sounds simple, doesnt it?!

Ingredients

400 g Flour, Wheat, bread flour

1 teaspoon Baking powder

1.5 teaspoons Baking powder

50 g Oat bran, raw

75 g Cheese, feta

280 ml Whey, sour, liquid

1 spoon Honey

1 piece Egg, fresh

1.5 handful Oat bran, raw

Preheat the oven to 200 degrees Celsius. Grate the zucchini coarsely and place it on a clean cheesecloth or kitchen towel. Squeeze the cloth tightly to remove as much excess liquid as possible from the zucchini.

In a bowl, mix the flour, baking powder, baking soda, and salt. Add the crumbled feta cheese, squeezed zucchini, and rolled oats. Mix the ingredients well.

In another bowl, mix the honey and buttermilk. Pour the liquid mixture into the bowl with the dry ingredients. Quickly but thoroughly mix the ingredients with a wooden spoon to form a uniform and sticky dough (do not overmix the dough!).

Line a deep rectangular baking dish with parchment paper. Pour the prepared mixture into the dish. Use the back of a spoon or a spatula to spread it evenly and smooth the top. Brush the top with a beaten egg and sprinkle with sunflower seeds and rolled oats. Bake the bread in the preheated oven for 40 to 60 minutes. It is done when a nice crust forms and the inside is no longer wet and sticky.

Let the baked bread cool in the dish for a few minutes, then transfer it to a wire rack and let it cool completely. It is best when still slightly warm, but you can let it cool completely before serving if desired.
