Quick Cornmeal Bake with Nettles
The spring sun brings forth many medicinal plants from the ground. Lets take the opportunity to gather them during a walk and cook delicious dishes from them. One of them is the well-known nettle, where we collect the young tops, which are an exceptional gift from nature. Consuming nettles gives us energy, purifies the blood, stimulates digestion, strengthens the kidneys, and is particularly beneficial for women of all ages. This time, I share with you a recipe for a very simple and healthy meal, suitable also for a snack or as a side dish for lunch.

Ingredients

1 piece Wheat flour, white, multi-purpose

1 piece Koruzna moka, whole grain, yellow

1 piece Baking powder

1 piece Yogurt, plain, from whole milk

3 pieces Egg, fresh

pieces Dill, fresh

1 teaspoon Salt, table

4 spoon Oil, olive

4 spoon Cheese, cottage cheese

2 spoons Sour cream
Steps

Wash the nettle tops (use gloves to avoid being 'stung' by the nettles). Boil water in a pot and cook the nettles for 5 minutes. Drain the cooked nettles, let them cool, squeeze them, and chop them finely.

Put both flours, baking powder, and salt in a bowl and mix the ingredients. Add the eggs, oil, cottage cheese, and yogurt. Mix everything until you get a smooth batter.

Divide the batter into two parts. Add the chopped nettles to one part and leave the other part as it is.

Grease the baking dish with olive oil, then alternately spoon both batters into the dish. Start by adding a spoonful of nettle batter to the center of the dish, then add a spoonful of plain batter on top of the nettle batter. Repeat the process until both batters are used up. This creates a nice pattern. If you're in a hurry, you can mix the nettles into the entire batter and pour it all into the greased baking dish.

Bake the cornmeal bake for 30 minutes at 200 degrees Celsius. Extend the baking time if needed.

Garnish the baked cornmeal bake with sour cream and serve.
