Quick Cottage Cheese Pastry with Crumble

250 ml Milk, whole milk

Steps

Wash the apples, peel them, and cut them into pieces.

Place a pot on the stove, pour in water, and add sugar, cinnamon, and lemon juice. Mix the contents and bring to a boil. Add the apples and quickly cook them until they soften slightly (be careful not to let them fall apart). Drain the apples and let them cool.

Sift the flour into a bowl and mix it with sifted baking powder, salt, and sugar. Add cold butter cut into cubes to the mixture. Using your fingertips, work the butter into the dry ingredients, lifting the mixture to make it airy and crumbly.

Preheat the oven to 160°C. Place 2/3 of the crumble mixture into a deep baking dish and spread it evenly over the entire surface. Mix the cooled apples with cottage cheese, sour cream, milk, egg, sugar, and cranberries. Spread the mixture evenly over the crumble. Gently mix the remaining crumble with coffee powder and sprinkle it over the filling. Bake the pastry in the preheated oven for 45 minutes, until the crumble on top is crispy and golden. Once baked, remove the pastry from the oven and let it cool in the baking dish.

Melt the chocolate couverture over steam. Drizzle it over the cooled pastry as desired. Once the chocolate has cooled and set, cut the pastry into smaller pieces, serve on a plate, and enjoy.

Advice
If we dont have frozen cranberries, we can use dried cranberries, which we soak in rum or orange juice beforehand.
