Quick Cottage Cheese Pastry with Raspberries and Almonds (Pastry for Greedy Neighbors)
A pastry for greedy neighbors with the addition of fresh raspberries and almond flakes. The preparation is incredibly simple, and the pastry is very juicy and so delicious that one piece will definitely not be enough. Keep in mind that the dessert must cool well before serving.

100 g Sugar, white

50 ml Oil, vegetable oil, canola

50 g Flour, Wheat, bread flour

250 g Cheese, cottage cheese

90 g Yogurt, plain, from whole milk

0.5 bags Pudding, vanilla

1 handful Nuts, almonds, blanched

Steps

If necessary, quickly rinse the raspberries under running water and drain them on paper towels.

Preheat the oven to 170 degrees Celsius. Grease a round baking dish (23 cm in diameter) with butter and optionally sprinkle it with bread or biscuit crumbs.

In a bowl, beat 2 eggs and add half of the sugar. Using an electric mixer, beat them into a light, pale yellow cream, into which first mix the oil, then the flour mixed with baking powder.

Pour the batter into the prepared baking dish and spread it evenly with a spatula. Sprinkle the raspberries over the batter.

In a bowl, add the cottage cheese, yogurt, egg, the remaining sugar, lemon zest, and vanilla pudding powder. Mix the ingredients well with an electric mixer to obtain a uniform mass, which is then spooned onto the batter in the baking dish. The cottage cheese mixture will mostly sink, and the batter will rise. Smooth the cottage cheese mixture on top, then sprinkle it with almond flakes. Place the baking dish in the preheated oven for 40 minutes. For the last 5 minutes of baking, increase the temperature to 200 degrees Celsius so that the pastry and almonds bake to a nice golden brown.

Let the pastry cool well before serving. Once cooled, sprinkle with powdered sugar, cut into pieces, and serve.
