Quick Cottage Cheese Pastry Without Flour

Steps

Pick through the raisins, place them in a bowl, and pour rum over them. Let them soak while you prepare the other ingredients. Preheat the oven to 180 degrees Celsius.

Prepare two bowls; in one, mix the eggs and half of the sweet cream (do not whip the ingredients!), and in the other, mix the cottage cheese, the remaining cream, 2-3 tablespoons of powdered sugar, grated lemon zest, and vanilla sugar. Add the egg mixture, ground almonds, and soaked raisins to the cottage cheese mixture.

Pour the mixture into a baking dish that has been well-greased or lined with baking paper. The pastry can be baked in a round, square, or rectangular baking dish. Arrange whole almonds on top, then place the dish in the preheated oven for about 45 minutes. The pastry is done when it turns a nice golden brown on top.

Let the pastry cool slightly before serving. Dust it with powdered sugar, cut into pieces, and serve with a cup of warm beverage.
