Quick Curd Cake with Crumbs and Raspberries
A very tasty, juicy, and quickly made dessert from simple homemade ingredients that you can prepare a day in advance, as it can easily wait in the refrigerator. In fact, it tastes even better the next day. If you dont have raspberries on hand, you can use strawberries, raisins soaked in rum, or fruit from compote. The dessert pairs excellently with a cup of warm beverage, and when serving, you can add a dollop of whipped cream on the side.

Steps

Preheat the oven to 180 degrees Celsius. Grease a round cake pan, approximately 22 cm in diameter, with butter and dust with flour (you can also use any oval, round, or rectangular baking dish). Remove any excess flour. If necessary, quickly rinse the raspberries under running water and dry them.

In a bowl, add softened butter cubes, regular sugar, and vanilla sugar. Mix the ingredients with an electric mixer until creamy. Add the eggs and mix until you get a light, pale yellow mixture, then stir in the curd and grated lemon zest.

At the very end, mix in the wheat crumbs, which have been combined with baking powder.

Pour the curd mixture into the baking dish and spread it evenly with a spatula, smoothing the top. Add the raspberries and gently press them into the batter with your fingers. Bake the cake in the middle of the oven for about 40 minutes. If necessary, cover the dish with aluminum foil during the last 10 minutes of baking to prevent the top from over-browning.

Let the cake cool completely before serving. Before slicing, dust the top with powdered sugar.
