Quick Curd Dumplings with Fruit
Even if you swear by potato dough dumplings, you might change your mind once you try these curd dumplings. The curd dough is very quick to make, and preparing the dumplings is also extremely simple. For the filling, we used fresh plums, which you can substitute with any other seasonal fruit or use a preserved filling.

In a bowl, place the curd and mash it with a fork. Mix it with the beaten egg, egg yolk, and salt. Sift the flour mixed with starch into the mixture. Mix or knead the ingredients well to form a soft curd dough, then place it in the refrigerator for 15 minutes.

Wash and dry the plums. Take the dough out of the refrigerator and roll it out on a lightly floured surface into a thicker roll, which you then cut into equal-sized pieces. Flatten each piece in your palm and place a plum in the center, wrapping the dough around it from all sides. Shape it into a dumpling with your hands. Repeat the process until all ingredients are used.

Bring a large pot of lightly salted water to a boil. Once the water is boiling, add the dumplings and cook them over moderate heat for 6 to 10 minutes. Remove the cooked dumplings with a slotted spoon, serve them on plates, and sprinkle with ground biscuits or toasted breadcrumbs. Serve with compote or sour cream.
