Quick Curd Pastry with Blueberries and Crumble

Steps

Preheat the oven to 180 degrees Celsius. Prepare a deep baking dish, approximately 35 x 25 centimeters. If you don't have a deep dish, it's better to use a larger one, as the curd layer will rise significantly during baking.

Cream the butter, sugar, and vanilla sugar until smooth. Quickly mix in the eggs one by one, then add the curd, sour cream, and cornstarch.

Whip the cream and fold it into the curd mixture. Pour it into the baking dish, smooth the surface, and bake for 40 minutes.

In a saucepan, combine all the ingredients for the blueberry layer: blueberries, grated lemon zest, juice of half a lemon, water, cornstarch, and sugar. Heat while stirring until the mixture thickens, then remove from heat.

Mix all the ingredients for the crumble in a bowl until it resembles coarse crumbs.

After the first baking, remove the dish from the oven. Spread the blueberry mixture over the curd layer and sprinkle with the crumble. Bake for another 20 minutes. After baking, let it cool, then refrigerate, preferably overnight. Once cooled, cut the pastry into desired pieces, serve on plates, and enjoy.
