Quick Gibanica
If you often crave the flavors of the delicious Prekmurje gibanica but simply dont have enough time to prepare it at home, this recipe is a great solution. The dessert contains all the ingredients of this unique Slovenian treat but will take significantly less time to prepare. You can also enjoy it if you are sensitive to gluten, but keep in mind that the slices are better a day or even two after baking.

Steps

Preheat the oven to 175 degrees Celsius and grease a larger baking dish. Separate the egg yolks from the whites. Beat the whites into stiff peaks, then add sugar to the yolks and mix with an electric mixer until they become lighter and their volume triples. Then mix in the ground walnuts, followed by a quarter of the egg whites, and finally the rest. Pour the mixture into the baking dish, smooth the top, and bake in the preheated oven for 15 minutes.

Mix all the ingredients for the remaining three layers: in the first bowl, combine poppy seeds, sugar, vanilla sugar, and cooking cream. Peel and grate the apples, then mix them in a second bowl with lemon juice, sugar, and cinnamon. In a third bowl, mix all the ingredients for the cottage cheese layer: cottage cheese, sour cream, eggs, sugar, vanilla sugar, lemon zest, and cornstarch.

First, spread the poppy seed mixture over the sponge cake, then distribute the apples on top, gently press them down, and pour the cottage cheese mixture over them. Bake the pastry for 60 minutes at 175 degrees Celsius.

Let the baked pastry cool before serving, sprinkle with powdered sugar, and cut into slices of your desired size.
