Sort the raisins, rinse them under running water, and drain. Then place them in a bowl, pour rum over them, and let them soak for 15 minutes.

Beat the eggs and sugar until frothy. Mix in the lemon juice, melted butter, flour, chopped hazelnuts, candied orange peel, and cinnamon. Finally, fold in the drained raisins, which have been roughly chopped.

Preheat the oven to 180 degrees Celsius. Scoop the batter with a spoon and place it in mounds on a baking sheet lined with parchment paper. Bake the cookies in the preheated oven for 10-15 minutes, or until they achieve a beautiful golden brown color.
