First, prepare the dough. In a large bowl, add the flour and mix it with yeast and salt. Make a well in the center and pour in lukewarm water. Mix the ingredients with your fingers or a spoon until they come together to form a rough dough. Then, turn the dough onto a lightly floured work surface and knead it until it becomes smooth, pliable, and firm, and no longer sticks to your hands. Shape the dough into a loaf, cover it with a clean kitchen towel.

Next, prepare the sauce. In a bowl, mix the tomato puree, olive oil, and basil. Season the sauce to taste with pepper and salt. Drain the mozzarella well and slice it thinly.

Preheat the oven to 240 degrees Celsius. Prepare two pieces of baking paper. Divide the dough into two parts. Shape each part into a ball with your hands. Roll out each ball on a lightly floured surface into a thin circle, about 25 cm in diameter. Place the circles on the prepared baking paper. Spread the dough with the sauce and top with the mozzarella slices. Season everything with a little dried basil. Carefully place one pizza on a baking tray and bake in the preheated oven for 8 to 10 minutes, or until the dough is crispy and baked. Once the pizza is baked, bake the second pizza in the preheated oven.

Before serving, top the pizzas with fresh basil leaves, drizzle with a little olive oil, and serve.

Advice
If the dough is too dry, add a little more water, and if its too sticky, add a bit more flour. Properly kneaded dough is elastic and doesnt stick to your hands. If you have time, you can let the dough rise.
