Ingredients
Hazelnut crumble
-
50 g Nuts, hazelnuts
-
50 g Sugar, white
-
50 g Wheat flour, white, multi-purpose
-
1 pinch Salt, table
-
50 g Butter, unsalted
Mascarpone cream
-
500 g Cheese, creamy
-
250 ml Sweet cream
-
3 spoons Honey
Stewed plums
-
500 g Plum
-
3 dl Alcohol, Dessert wine
-
100 g Sugar, white
-
1 piece Sugar, white
-
1 piece Spices, cinnamon, ground
Steps
-
Preheat the oven to 160 degrees Celsius. Line a baking tray with parchment paper.
-
Mix all the dry ingredients for the crumble, namely hazelnuts, sugar, flour, and salt. Add the cubed butter and quickly knead into a crumbly dough.
-
Spread the mixture evenly on the baking tray in a thin layer or in small mounds. Bake for about 10 minutes, then let it cool.
-
For the mascarpone layer, mix all the ingredients and place the cream in the refrigerator.
-
Halve the plums, remove the pits, and cut each half again to get quarters.
-
Pour the wine into a pot, add sugar, vanilla sugar, and a cinnamon stick. Bring to a boil, then add the plums and cook for 5 minutes.
-
Transfer the plums to a plate, and reduce the wine to create a thick syrup. Return the plums to the pot, cover, and let them cool.
-
Assemble the dessert just before serving. In 8 glasses, first crumble the hazelnut mixture, then add the mascarpone cream, and top with the plums. Drizzle with a bit of syrup and serve.
