Quick Ricotta Gnocchi
Ricotta gnocchi can be prepared with various sauces, served as a side dish to goulash or steaks in sauce, and are also excellent as a dessert, topped with breadcrumbs or without, and combined with any fruit sauce. You can also prepare them in advance and freeze them.

Ingredients

500 g Cheese, cottage cheese

1 piece Egg, fresh

1 pinch Salt, table

pieces Spices, nutmeg, ground

50 g Cheese, Parmesan, hard

g Flour, Wheat, bread flour
Steps

In a bowl, place the ricotta and mash it well with a fork. Mix it with the egg and salt. Optionally, add a little grated nutmeg.

Into the ricotta mixture, first mix in the grated Parmesan with a spoon, then add the flour. Once the ingredients are combined and form a dough, turn it out onto a lightly floured work surface and cut it into several smaller pieces. Roll these into longer logs, then cut them into gnocchi with a blunt knife.

Lightly dust the gnocchi with flour to prevent them from sticking together. You can freeze the gnocchi or cook them in salted water (see tips).

Advice
If you want to freeze the gnocchi, place them on a tray, board, or plate and put them in the freezer. Once frozen, transfer them to a bag. Cook the gnocchi in salted water. When they float to the surface, cook them for another 1-2 minutes, then remove them from the pot.
