Quick Zucchini and Yogurt Bake
An excellent dish that is made very quickly, as you simply need to mix all the ingredients in a large bowl, pour the prepared mixture into a greased baking dish, and bake in the oven. Cut into large pieces, this bake is a great standalone dish that, together with a bowl of salad, makes a light summer meal. If you cut it into small pieces, you get a perfect snack for various summer picnics and parties, or you can take it on a trip.

1 piece Small pumpkins

500 ml Yogurt, plain, from whole milk

3 spoons Flour, Wheat, bread flour

0.5 teaspoons Baking powder

Clean the zucchinis, wash them, and coarsely grate them (you can also slice them into rounds, half-moons, or small cubes). Place the grated zucchinis in a bowl, lightly salt them, and mix well. Let them sit for 10 minutes to allow excess water to release.

In another bowl, crack the eggs and whisk them well with a hand whisk. Add yogurt, pepper, minced garlic, and any desired herbs (parsley, basil, chives, thyme, etc.). Mix well to create a uniform mixture, then stir in the flour, breadcrumbs, and baking powder. Make sure there are no lumps in the mixture.

Squeeze the zucchinis well with your hands and mix them into the yogurt mixture. If necessary, add a bit more salt, but be careful as the zucchinis are already salted.

Grease a round or rectangular baking dish with oil, then pour in the prepared mixture, spreading it evenly over the entire surface and smoothing the top. Bake in a preheated oven at 200°C (392°F) for 25-30 minutes. The bake is done when it turns a nice golden brown.

The bake is good both warm and cold. A bowl of salad pairs excellently with the warm version.
