Rabbit Legs with Spices and Herbs

0.5 dl Wheat germ oil

0.5 teaspoons Salt, table

0.5 teaspoons Spices, oregano, dried

Steps

Rinse the rabbit legs under running water and dry them with a paper towel. Pour oil into a pan and heat it. Place the legs in the heated oil and roast them for 5 minutes until they turn golden brown on the surface. Turn them occasionally to ensure they brown evenly on all sides. Then, sprinkle them with salt, dried oregano, parsley, and chili. Cover the pan and roast the legs on low heat for 10 minutes. While roasting, make several cuts into the meat with a knife down to the bone.

After 10 minutes, turn the legs over and season the roasted side. Cover the pan again and roast for another 10 minutes. Serve the roasted legs on plates and accompany them with a side dish of your choice and a glass of red wine.

Advice
Instead of chili, you can use ground red paprika. Rosemary or thyme also pair excellently with rabbit, but since they have a more pronounced flavor, use only one or two types of spices.
