Rabbit Stew
Cunnilo is a traditional dish that you will be served in Andorra, a small mountain country located in the eastern Pyrenees. The dish is prepared in various ways, but most commonly, rabbit meat is cooked in a thick tomato sauce with onions and white wine. The dish pairs well with numerous side dishes (rice, polenta, gnocchi, etc.), and bread is also an excellent accompaniment, which you will happily use to wipe the plates clean.

Ingredients

1.5 kg Game meat, wild hare, fresh

60 ml Vinegar, apple

2 spoons Oil, olive

6 pods Garlic, fresh

2 piece Onion, raw

500 g Tomato, red

1 piece Spices, bay (leaves)

2 piece Thyme, fresh

1 teaspoon Spices, oregano, dried

250 ml Alcohol, Wine, White

120 ml Water

Steps

Rinse the rabbit pieces under running water and dry them well with paper towels. Rub each piece with a little vinegar. Peel the onion and garlic, and chop them coarsely separately.

Pour olive oil into a large pot and wait for it to heat up. Brown the rabbit meat in batches in the hot oil. Once the meat is nicely browned, remove it from the pot and set it aside on a plate.

In the same pot where the meat was browned, add the onion and sauté it over medium heat for about 5 minutes, stirring occasionally, until it softens and becomes translucent. Add the tomato and garlic, mix the ingredients well, then add the spices, wine, and water. Increase the heat to bring the sauce to a boil, then add the browned rabbit meat. Season with salt and pepper to taste.

Reduce the heat so that the sauce simmers gently, cover the pot with a lid, and let the rabbit cook in the sauce for about 90 minutes or until the meat is tender. Add more water if needed, and adjust the seasoning with salt and/or pepper if necessary.

Serve the prepared dish on plates and offer it with your chosen side dish.
