Rabbit Stew with Vegetables

Steps

Rinse the meat under running water and dry it with a paper towel. Peel the onion, rinse it, and chop it finely. Pour olive oil into a large pot and add the onion. Sauté the onion over moderate heat for one minute, then add the meat and mix well.

Clean the mushrooms, rinse them, and cut them in half. Add them to the pot with the meat and mix well. Rinse the tomato and cauliflower and cut them into smaller pieces. Peel the potato and dice it. Rinse the potato, then add it to a bowl along with the tomato and cauliflower.

Fill the pot with water up to 3/4 of its capacity, add salt, and stir in a heaping tablespoon of tomato paste. Cook for 15 minutes, then add the vegetables from the bowl. Add pepper, bay leaf, and a little rosemary to the water. Mix everything together and cook for another 15 minutes.

Rinse the parsley, shake it dry, and chop it. Add it to the pot, mix well, and cook for the final 10 minutes. Serve the stew with a ladle into bowls and accompany it with homemade bread.
