Ingredients
-
1.2 kg Game meat, wild hare, fresh
-
2 spoons Honey
-
2 spoons Juice, lemon
-
3 spoons Oil, olive
-
5 drops Oil, vegetable oil, canola
-
1 pod Garlic, fresh
-
2 twigs Rosemary, fresh
-
1 pinch Salt, table
-
1 pinch Spices, pepper, black
Steps
-
Prepare the rabbit by flattening it with a meat mallet. Season it with salt and pepper on all sides.
-
In a small bowl, mix honey with lemon juice and three tablespoons of olive oil to create a marinade.
-
Peel and grate the garlic, wash and dry the rosemary. Strip the needles from one sprig, finely chop them, and mix them with the garlic into the marinade. Season with salt and pepper as desired. Use the other sprig of rosemary to brush the marinade onto the meat.
-
Light the charcoal and heat the grill, then oil it. Place the whole rabbit on the grill and cook it over medium heat for 30 to 35 minutes, turning it occasionally and brushing it with the marinade using the rosemary sprig.
-
Place it on a platter and carve it at the table.

Advice
To check if the rabbit is cooked, use a skewer and pierce the thickest part of the meat. If red liquid comes out, cook it for a few more minutes. Another successful version is to use a meaty chicken instead of rabbit.
