Raffaello cheesecake
A wonderful dessert for a light summer indulgence. Its preparation is quick and simple, and you wont need an oven. For a gluten-free version, use gluten-free butter cookies.

Ingredients
Cookie base

100 g Butter, unsalted

150 g Breadcrumbs, dried

50 g Nuts, almonds
Cream

125 g chocolate, dark

350 g Cheese, creamy

70 g Sugar, white

1 bag Sugar, white

50 g Sour cream

2 teaspoons Juice, lemon

1 pinch Salt, table

60 g Coconut, flakes

300 ml Sweet cream

1 bag Baking powder

150 g chocolate, dark

Steps

Place a cake ring or a springform pan with a diameter of 20 centimeters on a cake tray, and line the inside with acetate foil or parchment paper.

Melt the butter and crush or grind the butter cookies. Mix them with ground almonds and add the mixture to the ring or springform pan. Spread it evenly, level it, and press it down to create a roughly even base for the cake.

Melt the chocolate for the cream layer over a water bath. Place the cream cheese, sugar, and vanilla sugar in a bowl and mix well. Add sour cream, lemon juice, and salt, and mix. Then fold in the melted white chocolate and coconut flour.

Pour the cream into another bowl and add cream stabilizer (kremfix) while whipping. Whip until stiff.

Gently fold the whipped cream into the coconut cream using a spatula, then spread it over the cookie base and smooth the top. Place it in the refrigerator to set the cream.

Break the chocolate for the glaze into a bowl. Heat the sweet cream in a saucepan until it boils. Pour the cream over the chocolate and wait for one minute, then mix thoroughly with a spatula until you get a completely smooth chocolate mixture, which you then pour over the cake.

Place the cake in the refrigerator for at least 2 hours or overnight. Before cutting, remove the ring or springform pan and the foil or parchment paper. Decorate the dessert as desired before serving.
