Raspberry Granita

Ingredients

4 dl Water

100 g Sugar, white

200 g Raspberries

1 teaspoon Vanilla, extract, natural

Bring sugar and water to a boil and stir until the sugar dissolves. Remove from heat and cool to room temperature.

Blend raspberries and vanilla with an immersion blender into a puree, add the sugar syrup, and mix well.

Pour the mixture into an ice cream maker, and the granita is essentially done. If you don't have an ice cream maker, you can pour the mixture into a shallow container so that the granita freezes as quickly as possible. It's best to leave it in the freezer for at least 3 hours, stirring it quickly with a fork every half hour.

Before serving the granita, dip the rim of the glasses in lemon and then in white crystal sugar. You can use a fork to scrape the granita into the glasses to form crystals.

Advice
If you dont like the tiny seeds from the raspberries, strain the raspberry puree. If the seeds dont bother you, theres no need to do so.
