Raspberry Pastry with Oatmeal Butter Crumbs
This excellent pastry can be prepared in all seasons, as it does not require fresh raspberries.

125 g Wheat flour, white, multi-purpose

0.25 teaspoons Baking powder

2 pinch Salt, table

85 g Oat bran, raw

100 g Sugar, brown

115 g Butter, unsalted

240 g Marmalade, orange
Steps

Preheat the oven to 175 degrees Celsius. Lightly grease a square baking pan (20 x 20 cm) and line it with baking paper.

In a bowl, mix the flour, baking soda, and salt. Add the oatmeal and brown sugar to the mixture. Sprinkle the cubed butter over the mixture and use your fingers to work it into the dry ingredients until it resembles crumbs.

Spread about 2/3 of the mixture evenly over the bottom of the baking pan. Gently press the dough with your hands to form an even layer. Spread the raspberry jam evenly over the dough (leaving about 0.5 cm of empty space around the edges). Sprinkle the remaining oatmeal butter crumbs over the raspberry jam and very gently press them into the jam with your palm.

Bake the pastry in the preheated oven for 34 to 38 minutes, or until the butter crumbs on top turn a nice golden brown. Remove the baked pastry from the oven and let it cool in the pan.

Once cooled, cut the pastry into pieces of your desired size. Serve on a plate or platter and offer with a warm or cold beverage.
