In a bowl, crack the eggs and beat them together with 90 g of sugar until you get a light and thick, pale yellow cream. Sift the mixture of flour, baking powder, and cornstarch over the top and quickly fold it into the beaten eggs using a spatula or hand whisk to create a light and smooth batter without lumps.

Lightly grease a medium-sized rectangular baking dish (approximately 25 x 35 cm) with butter and line it with baking paper. Pour the batter into the dish and spread it evenly with a spatula, smoothing the top. Bake in a preheated oven at 180°C for 15 to 20 minutes, or until the sponge is springy to the touch and golden brown on top. Let the baked sponge cool.

While the sponge is cooling, prepare the remaining ingredients. Mix the mascarpone smoothly with powdered sugar. Blend the raspberries and the remaining sugar with a hand mixer, and strain the mixture through a fine sieve if desired. Prepare the gelatin according to the package instructions and dissolve it. Mix half of it into the mascarpone cream and the other half into the blended raspberries.

Spread the mascarpone cream over the cooled sponge, followed by the raspberry topping. Store the pastry in the refrigerator to cool completely, allowing the topping and cream to set. Once ready, slice it into pieces, serve on plates, and enjoy.
