Raspberry Slices with Pudding

First, prepare the base layer by mixing all the ingredients for the base in a bowl. Knead the dough well with your hands to form a larger ball, which you then divide in half. Use half for the base, spreading it evenly over the bottom of a smaller baking dish (18 x 11 cm). Press the dough firmly into the bottom with your hands. Save the other half of the dough for later.

Heat a small pot or saucepan and cook the raspberries in it, adding erythritol, lemon juice, starch, and chia seeds. Mix the ingredients well. When the 'jam' starts to boil, stir it for another 2-3 minutes, then remove it from the heat. Once the jam is ready, pour it over the base and spread it evenly over the entire surface.

Prepare the vanilla pudding according to the manufacturer's instructions. Instead of milk, use any plant-based drink, and use any sweetener for sweetness. Once the pudding is cooked, pour it over the raspberry jam and spread it evenly over the entire surface.

Finally, crumble the remaining dough over the top and bake everything for 25-30 minutes at 180 degrees Celsius.

Let the baked pastry cool, then cut it into slices and decorate with fresh raspberries as desired.
