Ingredients
-
500 g Raspberries
-
175 g Sugar, white
-
600 ml Water
-
40 ml Juice, orange
-
3 pieces Egg, egg white, fresh
-
3 twigs Mint
Steps
-
Wash the raspberries and blend them into a fruit puree using a hand blender. In a saucepan, combine sugar and water. Heat them slowly over low heat until the sugar completely dissolves. Bring the mixture to a boil and let it simmer for two minutes. Remove the saucepan from the heat and allow the syrup to cool.
-
Mix the cooled syrup with the raspberry puree and orange juice. Pour the raspberry mixture through a fine sieve into a freezer-safe container and place it in the freezer for two hours. Once frozen, transfer the mixture to a larger bowl and whisk it to break up any large ice crystals.
-
Using an electric mixer, beat the egg whites into stiff peaks. Gently fold the beaten egg whites into the raspberry ice mixture. Pour the mixture back into the freezer-safe container and return it to the freezer until the sorbet is completely firm.
-
Half an hour before serving, place the container in the refrigerator. Scoop the sorbet into balls and serve in glasses or bowls, garnished with mint or lemon balm leaves.
