Ingredients
Dough

140 g Wheat flour, white, multi-purpose

70 g Yogurt, plain, from whole milk

In a saucepan, slowly melt the butter over low heat. Remove the saucepan from the heat and let the butter cool slightly for a few minutes.

Preheat the oven to 190 degrees Celsius. In a bowl, sift together the flour and powdered sugar. Add salt, pour in the melted butter, and mix everything well until the ingredients combine and form a sticky dough. Spread the dough evenly in the bottom of a smaller square baking pan (20 cm side), lined with baking paper. Prick the dough several times with a fork and bake in the preheated oven for 20 minutes.

While the dough is baking, prepare the filling. Whisk the egg and sugar with an electric mixer until frothy. Reduce the mixer speed to medium and mix in the yogurt and drained raspberries. Then add the ground almonds and cornstarch. If you want to remove the seeds, strain the mixture through a fine sieve.

Reduce the oven temperature to 150 degrees Celsius. Spread the raspberry filling evenly over the dough. Bake the pastry in the preheated oven for another 30 minutes.

Remove the baked pastry from the oven and let it cool completely before cutting. Once cooled, cut into squares, serve on a plate or platter, and enjoy.
