Raspberry Tiramisu
A variation of the popular Italian dessert with fresh raspberries. The preparation is quick and easy, making it suitable for those moments when unexpected guests arrive.

250 g Raspberries

2 spoons Sugar, white

1 spoon Juice, lemon

250 g Cheese, creamy

200 g Sweet cream

80 g Powdered sugar

150 g Breadcrumbs, dried

Sort and clean the fresh raspberries, rinse them quickly under running water if necessary, and drain well. Set aside one-third of the raspberries, place the rest in a pot, and sprinkle them with sugar. Add lemon juice and slowly bring to a simmer over moderate heat. Remove the pot from the heat and let the raspberries cool. Once cooled, strain the raspberries through a fine sieve to remove the small seeds.

In a bowl, using an electric mixer, combine the sweet cream, powdered sugar, and mascarpone. Mix until a firm cream forms. Break the ladyfingers into smaller pieces.

Prepare the dessert glasses in which you will serve the dessert. Cover the bottom of the glasses with ladyfingers. Add a layer of cream, then arrange some of the reserved whole raspberries on top. Follow with another layer of ladyfingers, covered with cream. Finally, add the strained raspberry sauce. Decorate the prepared dessert with whole raspberries and serve.
