Ratatouille with Cheese Sauce

4 dl Milk, whole milk

80 g Cheese, Parmesan, grated

Preheat the oven to 220 degrees Celsius. Peel the onion and garlic, then finely chop them separately. Dice the eggplant and bell peppers, and slice the zucchini into thin pieces.

Heat olive oil in a large pan and sauté the onion until translucent. Add the garlic, and when fragrant, add the eggplant and bell peppers.

Cook the vegetables for 5 minutes, then pour in the balsamic vinegar and stir. Add the tomato puree (passata), sweet paprika, and sugar. Cook for 5 minutes, then stir in the basil and remove from heat.

In a small pot, melt the butter and sauté the flour for one minute. Remove from heat and, while continuously whisking with a hand whisk, slowly pour in the milk. Return the pot to the heat and cook while stirring until the sauce thickens. Finally, stir in the Parmesan cheese and remove from heat.

Transfer the vegetables in tomato sauce into two or more smaller round baking dishes or one larger one. Spread the cheese sauce on top, sprinkle with mozzarella, and arrange the zucchini slices nicely. Drizzle with olive oil, season with salt, and bake in the preheated oven for 30 minutes.
