230 g Mushrooms, mushrooms, fresh

4 twig Thyme, fresh

In a large pot, heat olive oil and sauté the eggplant. Add the onion and garlic, salt, and coarsely ground pepper, and stir-fry for another minute. Transfer the ingredients to another bowl.

In the same pot, quickly sauté the bell pepper, zucchini, and mushrooms. Add the prepared eggplant with garlic and onion, tomatoes, and thyme, and simmer everything for 15 to 20 minutes, stirring occasionally. At the end, add the vinaigrette, quickly simmer the ingredients, remove from heat, and add fresh basil.

Ratatouille can be served as a standalone dish with French baguette or as an excellent side dish to homemade gnocchi.
