Raw Cannelloni
Popular Italian pasta rolls, filled with herb-infused ricotta and topped with a refreshing tomato sauce, will delight all family members. Even those who can hardly imagine a meal without meat. A bowl of salad goes well with it.

Steps

In a pot, bring a large amount of salted water to a boil. Add two to three lasagna sheets to the boiling water and cook for 3 minutes - just enough to soften them slightly. Remove them from the pot with a slotted spoon, quickly cool them in a bowl of cold water, then lay them out on a damp cloth. Repeat the process with all the sheets.

Peel and finely chop the onion. Add it to a pan with heated oil and sauté over low heat, stirring occasionally, for 8 minutes until it turns light brown.

Grate the Parmesan and chop the basil. Place the ricotta in a bowl and mash it with a fork. Mix in the basil, 2/3 of the grated Parmesan, pine nuts, and sautéed onion. Season the mixture lightly with pepper and salt.

In a blender, blend the peeled tomatoes, tomato concentrate, and chopped garlic into a smooth sauce. Season the sauce lightly with pepper and salt.

Preheat the oven to 190 degrees Celsius. Pour about 1/3 of the tomato sauce into a deep baking dish and spread it evenly with a spoon. Place the ricotta filling on the lasagna sheets, roll them up, and arrange them side by side in the baking dish. Sprinkle the rolls with Parmesan and bake in the preheated oven for about 30 minutes.

Once the cannelloni are baked, use a spatula to serve them on plates. Top them with the reserved tomato sauce and serve.
