Red Beet Soup
Soaked red beets, carrots, and potatoes are the basic ingredients of this exceptionally healthy and nutritious soup. Added spices ensure an exceptional flavor, and a dollop of sour or sweet cream, used to garnish the soup before serving, adds the finishing touch.

Steps

Sauté the onion and garlic in oil. Add the carrots cut into rings and the potatoes cut into cubes. Pour in water, add the soup base, season with salt, pepper, thyme, parsley, and marjoram, and cook until the vegetables are tender. About halfway through cooking, add the red beets, which should be quickly rinsed under water.

Mash one part of the cooked vegetables into a puree, while keeping the other part aside on a plate. If the puree is too thick, add a little more water. Then mix the mashed puree with the reserved vegetables. Optionally, add cumin to flavor the soup. Add a bit of sour or sweet cream, serve in deep plates or soup bowls, and enjoy.
