Red Polenta with Vegetables and Bacon
Polenta is a popular home-cooked dish. We can spice it up with various additions: grated cheese, vegetables, and bacon. By adding tomatoes, we color it red and transform it into a tasty and interesting dish in a very simple way.

In a large pot, bring 1 liter of lightly salted water to a boil along with milk. Once the liquid boils, add the cornmeal to the pot. Stir well to avoid lumps. Cook the polenta over low heat for about 40 minutes. Stir it several times during cooking to prevent it from sticking to the bottom of the pot.

While the polenta is cooking, prepare the vegetables. Clean and wash the vegetables first. Then chop them finely. Also, cut the bacon into small pieces. Place a pan on the stove and heat the oil. Sauté the chopped vegetables in the hot oil while stirring. Add the bacon and quickly sauté it while stirring. Then add tomato puree and concentrate to the pan and mix everything well. Season the sauce with salt to taste. Cook it over moderate heat for 10 minutes.

Mix the prepared sauce into the cooked polenta. Stir well to ensure the sauce is evenly distributed throughout the polenta. Serve the prepared polenta on plates and enjoy.
