Red Velvet Cake

Preheat the oven to 175 °C. Line the bottom of the cake pans with parchment paper and grease well with butter.

In a bowl, sift together the flour, salt, and cocoa powder, and mix well. In another bowl, place the butter and beat it with an electric mixer until fluffy. Gradually (by the spoonful) add the sugar and continue mixing until you get a light and fluffy mixture. Gradually add the eggs and vanilla. Mix until you get a uniform, light batter.

In a saucepan, mix the milk and red food coloring. Slowly and alternately mix the flour mixture and the milk into the egg-butter mixture. Mix until you get a smooth, lump-free batter. In a small saucepan, mix the vinegar and baking powder and add this mixture to the batter. Mix everything well with a whisk once more.

Pour the batter into the prepared cake pans and smooth the surface. Bake in the preheated oven for 25 to 30 minutes. Insert a toothpick into the cake to check if it is done. If the toothpick comes out dry, the cake is baked. First, let the cake cool in the pans, then turn it out onto a rack and let it cool completely.

Prepare the frosting: in a bowl, place the cream and mascarpone and mix until you get a smooth mixture. Add the vanilla and powdered sugar and mix well.

Cut each cake layer horizontally to get four layers. Spread one-fifth of the frosting on each layer and stack them. Spread the frosting evenly over the top and sides of the cake.

Slice the cake, serve on plates, and enjoy.

Advice
Take the butter out of the refrigerator one hour before use to allow it to warm up and soften. The batter should be a beautiful red color, so add a little more red food coloring if necessary.
