Steps

Clean the young onion, wash it, and finely chop it. Thoroughly wash the ribs and dry them with paper towels. Then cut them into larger pieces, keeping 3 ribs together. Rub them well with salt and pepper.

Prepare a large bowl in which you mix the soy sauce, rice wine, sesame oil, ginger, and chopped onion. Mix the marinade well, then add the ribs and coat them with the marinade. Let them marinate for a good hour.

Preheat the oven to 220 °C. Place the marinated ribs in a baking dish lined with baking paper. Bake them in the preheated oven for 30 minutes, then reduce the temperature to 180 °C and bake for an additional 10 minutes. Meanwhile, cut the cabbage head into quarters and remove the core, and peel the carrot. Grate both types of vegetables into a large bowl. Season the salad to taste with salt and pepper, and add a tablespoon of oil, cumin seeds, and a little vinegar. Mix the ingredients well.

Once the ribs are baked, serve them with the salad on plates and enjoy.
