Rice Cake with Raisins
Rice cake is definitely something we all know very well. It is a classic dessert that our grandmothers often delighted us with. This time, we’ve spiced it up a bit by adding raisins soaked in wine. Give it a try, you won’t regret it!

Grease the cake pan well with butter and coat it with breadcrumbs. Shake out any excess breadcrumbs from the pan. Store the pan in the refrigerator until ready to use. Sort the raisins, place them in a bowl, and pour wine over them. Let them soak for at least 30 minutes.

While the raisins are soaking, cook the rice. In a large pot with a thick bottom, mix milk, water, sugar, lemon zest, and salt. Slowly bring the mixture to a boil over moderate heat, then add the rice and cook it slowly over low heat for 15 minutes. Stir the rice occasionally while cooking so it absorbs the liquid and softens. Transfer the cooked rice to a bowl and let it cool.

Preheat the oven to 180 degrees Celsius. Separate the egg yolks and whites into two bowls. Once the rice has cooled, mix in the egg yolks, vanilla extract, butter, and soaked raisins. Beat the egg whites into stiff peaks and gently fold them into the rice mixture with a hand whisk.

Pour the mixture into the prepared pan and bake in the preheated oven for 40 to 50 minutes. Remove the baked cake from the oven and let it cool completely in the pan.

Take the cooled cake out of the pan, dust it with powdered sugar, and serve.

Advice
To check if the cake is baked, insert a toothpick into the center of the cake. If the toothpick comes out clean, the cake is done. If not, bake the cake for a few more minutes. Raisins can also be soaked in wine overnight. It’s best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
