Rice Pudding with Apples
Rice pudding is so easy to prepare that it’s really hard to mess up. Be a bit creative and adapt the basic recipe to your taste, experimenting with different additions. We decided to add grated apples to make the dessert even juicier and more flavorful.

Ingredients

2 spoons Juice, lemon

1 teaspoon Spices, cinnamon, ground

300 g Rice, white, short grain

1 l Milk, whole milk

1 pinch Salt, table

4 pieces Egg, fresh

1.5 spoons Butter, unsalted

Pour the milk into a larger pot. Lightly salt it and bring it to a gentle boil over moderate heat. Once the milk boils, reduce the heat and add the rice. Cook at low heat for about 15 minutes, allowing the rice grains to swell and form a thick and creamy mixture. Stir the rice several times during cooking. Transfer the cooked rice to a larger bowl and let it cool.

Wash the apples and peel them if desired. Coarsely grate them into a bowl (discard the stems and cores). Add lemon juice, sugar, cinnamon, and mix everything well.

Preheat the oven to 180 degrees Celsius. Generously grease a medium-sized deep baking dish with butter. Separate the egg yolks and whites into two bowls. Add regular and vanilla sugar to the bowl with the yolks. Using an electric mixer, beat the yolks and sugar until frothy. Beat the egg whites into stiff peaks.

Using a hand whisk, first mix the yolk mixture into the bowl with the cooled rice, then gently fold in the beaten egg whites in parts.

Pour half of the rice mixture into the greased baking dish and spread it evenly. Layer the grated apples over the rice mixture and cover them with the remaining half of the rice mixture. Pour sweet cream over the top. Place the baking dish in the preheated oven for 30 to 40 minutes. The pudding is done when a golden-brown crust forms on top.

Remove the baked pudding from the oven and let it cool slightly. Then, cut it into pieces of your desired size, serve on plates, dust with powdered sugar, and enjoy.
