Rice Pudding with Candied Fruit and Biscuits
A simple homemade dessert like rice pudding can be transformed into a true delicacy with just a few additions. Add candied fruit, aromatic spices, and crumbled amaretti, the famous Italian almond biscuits.

In a large pot with a thick bottom, mix milk, 80 g of sugar, vanilla sugar, grated lemon zest, cinnamon, cloves, and salt. Place on the stove and bring to a gentle boil over moderate heat. Add the rice and cook it slowly on low heat, stirring occasionally, for 15 to 20 minutes—until it softens and absorbs most of the liquid. Transfer the cooked rice to a bowl and let it cool to lukewarm. Before adding the remaining ingredients, remove the cloves.

Separate the egg whites and yolks into two bowls. Add the remaining sugar to the yolks and whisk until frothy. Beat the egg whites into stiff peaks. To the bowl with the cooled rice, first mix in the beaten yolks, then the liqueur, almonds, and candied fruit, and finally the crumbled biscuits and egg whites.

Grease a pudding mold with butter and dust it with breadcrumbs. Pour the rice mixture into the mold and spread it evenly with a spatula or the back of a spoon, smoothing the top. The mixture should be about 3 to 4 cm high in the mold. Bake the pudding first for 20 minutes in an oven preheated to 180°C, then reduce the temperature to 150°C and bake for another 20 to 25 minutes. It is done when the top turns a beautiful golden brown.

Remove the baked pudding from the oven and let it cool in the mold it was baked in. Before serving, dust it with powdered sugar and cut it into desired portions.
