Rice Pudding with Raisins

110 g Rice, white, short grain

1.1 l Milk, whole milk

55 g Sugar, white

55 dag Nuts, almonds

2 spoons Koruzni škrob

3 spoons Alcohol, Rum

1 spoon Honey

0.5 dl Juice, orange
Steps

In a small bowl, mix rum, orange juice, and honey. Stir until the honey is completely dissolved. Pick through the raisins, add them to the bowl, and mix well. In another bowl, mix sugar and ground almonds. Set aside half a cup (about 120 ml) of the total amount of milk.

In a thick-bottomed pot, add the rice and pour in one cup of water (about 240 ml). Add a pinch of salt and place the pot on the stove. Cook over moderate heat, stirring occasionally, until the rice absorbs all the liquid.

Then, pour one cup of milk into the pot, mix well, and wait for the rice to absorb all the liquid. Continue adding milk in this manner until all the milk is used (about 25 minutes). Always add milk only after the rice has absorbed all the liquid!

When adding the last cup of milk, mix in the almond and sugar mixture. Cook over moderate heat for another 2 to 3 minutes. In the reserved half cup of milk, mix in the cornstarch. Add the cornstarch and milk mixture to the rice and cook for another 3 to 4 minutes, until the mixture thickens slightly.

Divide the rice pudding into bowls. Add the raisins soaked in rum and orange juice. Serve the dessert warm or cold.
