4 spoon Lemon, fresh, without shell

300 g Broccoli, fresh

1 piece Carrot, fresh

1 piece Bell pepper, red, fresh

Cook the rice in salted water. After cooking, rinse and drain it, then let it cool. Wash the vegetables under running water and dry them with a paper towel. Squeeze the lemon and save the juice.

Place a pot with a liter of salted water on the stove and wait for it to boil. Once boiling, add the broccoli and carrot and cook them at a moderate temperature for 20 minutes. Slice the spring onion into rings; cut the green part diagonally into thinner slices. Add the onion to a large bowl along with the cooled rice. Remove the seeds from the bell pepper and slice it into rings, then add it to the bowl.

Cool the broccoli and carrot under running ice water and cut them into smaller, bite-sized pieces. Add them to the bowl, season everything with salt, drizzle with lemon juice and olive oil, mix well, and serve.
