Ingredients

2 cups Rice, white, short grain

1 cup Fish, shrimp

500 g Arugula

12 pieces Asparagus, fresh

1 can Corn, yellow, in brine

1 cup Olives, green, in brine

4 spoon Oil, olive

2 pinch Salt, table

4 spoon Lemon, fresh, without shell

Place the cooled rice in a large bowl. Rinse the radishes and olives under running water and drain them well. Drain the corn, rinse it, and drain again. Wash the asparagus and trim the woody ends. Clean, wash, and dry the arugula.

Pour a little oil into a large pan and sauté the asparagus on all sides, lightly seasoning with salt. Cut the asparagus into pieces of desired size and add them to the bowl with the rice. Add all the remaining ingredients to the bowl. Lightly salt the salad, drizzle with olive oil and lemon juice, then mix all the ingredients with a fork and spoon. Serve in bowls and enjoy.
