Ingredients
-
1 cup Cheese, ricotta
-
2 piece Egg, fresh
-
1 spoon Sugar, white
-
0.5 teaspoons Vanilla, extract, imitation
-
1 teaspoon Lemon zest, fresh
-
100 g Wheat flour, white, multi-purpose
-
1 pinch Salt, table
-
1.5 teaspoons Baking powder
-
0.5 teaspoons Spices, cinnamon, ground
-
pieces Oil, vegetable oil, canola
-
2 spoons Powdered sugar
Steps
-
In a bowl, mix the flour, salt, cinnamon, and baking powder.
-
If necessary, drain the ricotta, add it to the bowl, and mix it smoothly with an electric mixer. Add the eggs, sugar, vanilla extract (aroma), and lemon zest, and quickly mix to form a uniform mixture.
-
Sift the dry ingredients over the mixture and combine them with the ricotta mixture.
-
Heat oil in a larger pot to 180 ºC (if you don’t have a thermometer, you can test the oil by dipping the handle of a wooden spoon into it. The oil is hot enough when bubbles start forming around the handle).
-
Take a small spoon and dip it into the hot oil for a few seconds. Use the spoon to scoop the dough and place it into the hot oil—it will easily slide off the oiled spoon. Fry the balls gradually. When they turn golden brown on one side, flip them and fry the other side.
-
Remove the fried balls from the oil with a slotted spoon and transfer them to a plate lined with kitchen towels. Let the excess oil drain. Repeat the process until all the dough is used.
-
Arrange the still-warm balls on a large plate or platter, dust them with powdered sugar, and serve.

Advice
Fry in a large amount of fat. The food should float in it. It is best to use an organic lemon, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
