Risotto with Red Radicchio

Ingredients

25 dag Rice, white, short grain

20 dag Radicchio

5 dag Onion, raw

2 dl Alcohol, Wine, Red

0.1 dl Oil, olive

0.1 dl Oil, vegetable oil, canola

2 dag Butter, unsalted

1 pinch Salt, table

1 pinch Spices, pepper, black

1 bouquet Parsley, fresh
Steps

Peel the onion and chop it into smaller pieces. Rinse the rice in a colander under running water until the water runs clear. Thoroughly wash the radicchio and parsley, then finely chop them.

Place a larger pan on the stove and heat the oil (olive and vegetable) over moderate heat. Add the onion and radicchio and let them sauté for a few minutes. Then pour in the red wine and simmer until the wine has cooked off.

Meanwhile, place a new pot on the stove and pour in 5 dl of water, bringing it to a boil. Add the boiling water to the pan along with the rice and parsley. Season with salt and pepper to taste and mix everything well. Cook over moderate heat for an additional 20 minutes, until the rice is tender and all the liquid has evaporated. Once the rice is cooked, remove the pan from the heat and gently stir in the butter. Serve on plates and enjoy.
