Risotto with Wild Garlic
Wild garlic is a very healthy and popular spring wild plant that can be incorporated into many dishes. It can be used to spice up a sandwich spread or to prepare a delicious creamy soup, and it also works excellently as an addition to a creamy Italian risotto. If the flavor of wild garlic is too intense for you, you can briefly blanch the leaves before use.

Ingredients

320 g Rice, white, medium grain

120 ml Alcohol, Wine, White

1.4 l Soup base, chicken, cube

80 g Garlic, fresh

60 g Cheese, Parmesan, grated

Steps

Wash and dry the wild garlic leaves. Roughly chop or slice about half of the leaves into strips, and blend the other half in an electric blender with a tablespoon of olive oil until a nearly smooth mixture is formed.

Place a pot with the broth base on the stove. Bring the contents to a boil, then reduce the heat to low and keep the broth warm.

Peel and finely chop the shallot. In a deep pan or a larger, shallow pot, heat the remaining oil, to which you have added a tablespoon of butter. Sauté the chopped shallot in the heated fat. Add the rice and toast it, stirring constantly, until it becomes translucent, then pour in the wine and cook over moderate heat, stirring continuously, until the wine evaporates.

Then, add one or two ladles of hot broth to the rice. There should be just enough broth to cover the rice with liquid. Stir until the rice absorbs all the liquid, then add more broth. When the rice swells, add the blended wild garlic with oil. Continue cooking and gradually adding broth until the rice is cooked "al dente."

Remove the pan or pot from the heat and mix in the chopped wild garlic, grated Parmesan, and the remaining tablespoon of butter. Season the risotto with salt and/or ground pepper as needed, then cover it and let it rest for 3 minutes before serving. When serving, sprinkle a bit more grated Parmesan on top if desired.
