Roast Beef with Seasoned Salt
The best roast beef is well-aged and nicely marbled with fat. If we get such a piece of meat, then we dont need much for preparation. We can simply season it lightly and roast it so that it remains pink inside.

Ingredients

500 g Meat, beef, ribs

1 teaspoon Spices, pepper, black

1 teaspoon Spices, rosemary, dried

2 teaspoons Salt, table

3 spoons Oil, vegetable oil, canola
Steps

Rinse the meat under cold water and dry it thoroughly with paper towels. Let it sit at room temperature for at least one hour to warm up.

Meanwhile, prepare the seasoned salt. Grind the peppercorns in a mortar. Add the rosemary and grind it together with the pepper into a powder. Add salt and mix everything well.

Preheat the oven to 250 degrees Celsius. Just before roasting, rub the meat on all sides with the seasoned salt, but do not overdo it with the salt! It's better to add more salt to the already roasted meat. Rub the seasoned salt well into the meat with your fingers. Place the oven-safe pan in the preheated oven and let it heat up thoroughly.

When the pan is hot, reduce the oven temperature to 180 degrees and place the pan on the stove over high heat. Pour oil into the pan and sear the meat. Sear the meat on each side for about 5 minutes, and on the edges for about 3 minutes.

Once the meat is seared on all sides, place it along with the pan into the preheated oven. Roast it for about 12 minutes.

Transfer the roasted meat to a cutting board and let it rest for about 10 minutes. Then slice the meat into pieces of desired thickness, and season with additional seasoned salt if desired.

If we want the roast beef to be rare inside, we roast it for 9 minutes; if we want it to be well-done, we roast it in the oven for 15 minutes.
