Roast Chicken in Milk
An excellent recipe for preparing a very juicy and flavorful roast chicken in a slightly unconventional way, as it is baked together with aromatic additions directly in milk. The milk ensures both juicy meat and a thick, divine sauce that forms in the dish during baking. Steps

First, dry the whole chicken well with paper towels, then salt it generously both outside and inside.

Place the dish in which you will roast the chicken on the stove and add butter and olive oil. Once the fat is heated, add the seasoned chicken to the dish and brown it golden on all sides.

Remove the browned chicken from the dish and place it on a plate. Pour out any excess fat from the pot if desired, leaving only 1-2 tablespoons. Add the milk and the remaining additions, such as unpeeled garlic cloves, the peel of two lemons, a handful of sage leaves, and optionally a cinnamon stick.

Return the browned chicken to the dish with the breast side down, along with any juices that have been released during resting. Cover the dish and place it in the oven preheated to 180 degrees Celsius for 45 minutes.

After 45 minutes of baking, remove the dish from the oven and turn the chicken over. Roast it uncovered in the oven for another 45 minutes until it turns golden brown.

For roasting chicken in milk, it is best to choose a dish that you can use both on the stove and in the oven. If you dont have such a dish, simply use a pan for the stove and a baking dish for the oven.
