Roast Chicken with Apples
Roast chicken is a classic dish that often graces the table for Sunday lunch. This time, instead of the usual side dish of roasted potatoes, we offer something different - roasted apples, which pair wonderfully with the roasted chicken meat. If you prefer lighter meals, you dont need any other side dishes, but if youd like to serve something else alongside the roasted meat, you can prepare some dumplings.

Steps

Preheat the oven to 190 degrees Celsius. Place the oven rack in the middle position and generously grease a deep baking dish with oil. Clean the chicken, rinse it with lukewarm water, and thoroughly dry it with paper towels. Season the inside with pepper and salt.

Peel the onion and cut it into larger chunks, then scatter them in the greased baking dish. Place the seasoned chicken on top of the onion (breast side up). Generously coat the breast and thighs with butter, then season the outside of the chicken with pepper and salt. Sprinkle rosemary leaves over the chicken. Place the baking dish in the preheated oven for 80 minutes.

Halfway through the roasting time, prepare the apples. Wash them carefully, remove the stems and cores, and cut them into chunks. Add the apple chunks to the baking dish with the chicken (arrange them around the chicken).

After 80 minutes of roasting, check if the chicken is done (see tips). If it is cooked, remove the baking dish from the oven, transfer the chicken to a cutting board, loosely cover it with a piece of aluminum foil, and let it rest for 10 minutes. If the chicken is not yet done, extend the cooking time by another 10 to 15 minutes.

Cut the roasted chicken into individual pieces, arrange them on a nice plate or platter, and serve with the roasted apple chunks.

Advice
Chicken is usually roasted at 190 to 200 degrees Celsius using the following formula: 15 to 20 minutes of roasting for every 500 grams of weight, plus an additional 20 minutes for the whole chicken. The doneness of the chicken can be checked with a thermometer inserted into the thickest part of the thigh. The internal temperature of the cooked meat should be 75 °C. You can also check by making a deep cut into the thigh and inspecting the meat. The meat should not be pink, and no pink juices should run out. We recommend letting the roasted chicken rest for about 15 minutes before serving, allowing the juices to distribute evenly.
