Roast Chicken with Herb Bread Dumplings
An idea for a wonderful spring Sunday lunch that wont leave you with a pile of dirty dishes or spending half the day in the kitchen. The oven will do most of the work, giving you plenty of time to prepare a vegetable side dish and a large bowl of salad.

Ingredients
Dumplings

300 g Bread, wheat

250 ml Milk, whole milk

30 g Butter, unsalted

2 piece Egg, fresh

1 bouquet Thyme, raw

1.5 kg Meat, chicken, thighs

Steps

Preheat the oven to 180 degrees Celsius. Clean the chicken, rinse it with lukewarm water, and dry it thoroughly with paper towels. Rub the skin with butter, then season the chicken inside and out with pepper and salt.

Place the seasoned chicken in a roasting pan with the breast side down. Pour a little water over it and place it in the preheated oven.

While the chicken is roasting, prepare the dumplings. Heat the milk and butter in a saucepan. Cut the bread into pieces and place them in a bowl, then pour the warm mixture over them and let them soak for 15 minutes.

Rinse the herbs under running water, shake them dry, and chop them. Mix the soaked bread with beaten eggs, chopped herbs, and salt. Let the mixture stand for another 10 minutes.

Shape the bread mixture into dumplings with wet hands and add them to the roasting pan with the chicken. Roast everything together until the meat and dumplings are nicely cooked. Turn the dumplings several times during roasting and baste the chicken with the juices that have collected in the pan. Add a little more water if needed. To check if the chicken is done, make a deep cut into the thigh with a knife. If the meat and juices are no longer pink, the chicken is cooked.

Transfer the roasted chicken to a cutting board, loosely cover it with aluminum foil, and let it rest for 10 minutes before carving. Serve the meat with the roasted dumplings, a bowl of salad, and/or your choice of vegetable side dish.

Advice
Chicken is usually roasted at 180 to 200 degrees Celsius using the proven formula: 15 to 20 minutes of roasting for every 500 grams of weight, plus an additional 20 minutes for the chicken. The doneness of the chicken can also be checked with a thermometer inserted into the thickest part of the thigh. The temperature of cooked chicken meat is 75°C. We recommend letting the roasted chicken rest for about 10 minutes before serving to allow the meat juices to distribute evenly.
